If you have acute inflammation of the pancreas, or if you are diagnosed with chronic inflammation of the pancreas, your life will not be the same: you have to change everything.

Basic taboos

Under no circumstances should you eat or drink with inflammation of the pancreas. These include:

  • Alcohol (any), grape juice, soda;
  • Chocolate, greasy cream;
  • By-products;
  • Lamb meat;
  • Salo;
  • Figure;
  • Duck;
  • All fatty fish;
  • Goose;
  • Smoked meat, lard;
  • Banana;
  • Baked, spicy;
  • Boiled eggs;
  • Half-done products;
  • Solo;
  • Cooking fats;
  • Datolya;
  • Rich broths;
  • Preserves, jams;
  • Food of any kind;
  • ice cream (and ice cream in general);
  • Omelette;
  • Baking.

Acute pancreas

First, let’s talk about nutrition for acute pancreatitis. Do not eat at all immediately after exacerbation and for the next two days. Only five or six glasses of mineral water are allowed. Regeneration of the organ is due to the fact that gastric and pancreatic juice is not excreted.

On the third day you can eat but liquid, high carb, unsalted food. Wheat biscuits, vegetable soups and cereals, weak broth are allowed. After that you can go for the steamy omelette, turkey fillet, chicken, lean fish.

On the fifth day, the caloric content increases to 700-800 kcal, of which 200 g of carbohydrate, 15 g of protein. Fats are introduced between the sixth and ninth days.

The menu during this period should be as follows:

  • We cook rice porridge without milk, tea with sugar, orange (apple);
  • Snack of carrot (potato) puree, cooked low-fat fish or chicken (50 g), rosehip broth;
  • 150 g broth (vegetables), 30 g cooked fish (veal), apple puree, mashed potatoes for lunch;
  • Second snack. 50 g cottage cheese (0-2%) with sugar, sweet tea;
  • Instead of dinner - a spoonful of honey and boiled water (250 ml).

Recovery after exacerbation

The diet for pancreatic pancreatitis is more varied after exacerbation. If you try it, you can really find fun and delicious recipes from what’s allowed. We eat 5-6 times a day. When cooking, it is best to use steam, puree everything with a blender and cook.

You can eat:

  • Minimal fat meat (chop and cook). Meatloaf, steamed slices, meaty puff cooking. Permitted lean beef, rabbit, turkey fillet, chicken, veal;
  • Fish (you can use pollock, cod, pike, perch, flounder and other lean species). Boil or steam, steam slices are allowed;
  • Porridge made from oats, buckwheat, groats and rice. Barley with corn is rare. Cook in water (or in equal proportions in milk and water);
  • Pasta. Do not add sauce, only olive oil, butter. Do not fry with garlic, oil, onion;
  • Dairy products. Whole milk is not recommended. Fermented milk, kefir, cottage cheese up to 9%, light cheeses allowed;
  • Egg. Just like an omelette or cooked until soft. Rarely used;
  • Vegetables. Baked, cooked, mashed, vegetarian soups, casserole dishes. Pay attention to carrots, potatoes, melons, beets, green peas, cauliflower. You can’t eat most of the cruciferous family, mushrooms, horseradish, raw onions, spinach, garlic, beans (usually legumes), sweet peppers, sorrel;
  • We also fry fruits, cook compote, make jelly and mashed potatoes. Ideal for apricots, watermelons, cantaloupe;
  • Dry white bread with inflammation of the pancreas, drink tea with salty and not rich cookies;
  • Homemade jelly, mousse. Less commonly marshmallows;
  • Still mineral water, compote, weak tea, rosehip soup, jelly.

Chronic form

The diet for chronic pancreatic pancreatitis is different from the menu for acute inflammation. The chronic "variant" develops together with the acute inflammatory process of the gland, cirrhosis, hepatitis, gallstones, intestinal and gastric ulcers, atherosclerosis. The menu should take into account the background to the development of pancreatitis.

The main method of treatment is not medication, but a diet for chronic pancreatitis, the approximate menu of which is based on several principles:

  1. We eat six times a day and little by little we need laxatives.
  2. Keep track of your daily protein intake. You need 130 g a day, 30% of that number of plant proteins. Veal with beef, rabbit, turkey, low-fat pork, chicken and lean fish is recommended. With constant pain, the meat is cooked chopped or steamed. Low-fat fish and meat dishes should not be given up: they prevent the fatty degeneration of the liver that is characteristic of the chronic inflammatory processes in the pancreas;
  3. The greasy conversion is counterbalanced by homemade fresh cottage cheese (non-sour and with minimal fat content). Other dairy products are also needed. Add whole milk to the first dishes, cereals, jelly, or drink half a glass a day (if well tolerated). The fat content of milk should not exceed 2. 5%. If you feel good, say cheese (a little) with minimal fat and mild varieties. Don’t forget about kefir and fermented fried milk (homemade is the best option). You don’t have to consume in-store, tasty, and starchy yogurts: there’s little use here;
  4. Egg. Whole is not recommended. Eggs are acceptable as a supplement to other foods, in the form of a steamy omelette (protein), beaten proteins in other foods;
  5. Vegetable proteins. Find them in rice, noodles, yesterday’s bread, oatmeal, semolina, breadcrumbs, buckwheat. Legumes are prohibited;
  6. Fats. The patient's diet should be 70, of which 80% should be of animal origin. It is consumed properly with other foods and meals. Put butter in the finished porridge or dough before eating. Vegetable oils are allowed if they are well tolerated. Other types of fats (gastronomic, beef, margarine, pork) are prohibited;
  7. Carbohydrate. They need 350 g a day. These are honey, sugar, syrups and jams. Wheat groats, oatmeal, buckwheat, barley, rice, pasta should be eaten. Carrots and beets, potatoes, melons (zucchini, pumpkins, pumpkins) are acceptable. It is worth cooking in steam or water, the steam pudding is also good, the vegetables are worth eating in the form of mashed potatoes. Do not eat them raw. Bread allowed white, black, gray;
  8. Fruit. Mostly non-acidic apples are needed. Fry, wipe, cook compote. Dried fruits are suitable for the latter;
  9. Sauces. Of all the varieties with pancreatitis, one bechamel made from flour and milk is allowed. Do not pass the flour, add minimal salt;
  10. First meal. We never reject them. Cereal, vegetable, lean poultry, meat, fruit, milk soups are allowed;
  11. Drinks. In addition to the compote mentioned above, it is useful to drink juices, milk tea, mineral water;
  12. Accessories, special products. Add protein powder and vitamins to your diet;

Do not overdo it, the amount of food (plus all the liquid consumed) should not exceed two and a half kg. No matter how strict your diet seems to be for pancreatic pancreatitis, the approximate menu can’t be boring and varied.

Here's how to organize your meal in case of a chronic illness:

  • 7-7. Until 30 o'clock. Breakfast. Milk oatmeal, boiled beef, sweetened tea;
  • 9-9. Until 30 o'clock. Lunch. Baked apples, steamy omelette, rosehip tea;
  • 13. 00. We have lunch with vegetable soup, beef soup and pasta. For sweet berry jelly and compote;
  • 16. 30. Afternoon nasi. Tea with cottage cheese;
  • 20. 00. We have dinner with tea and fish soup.

Nutrition in remission

Here’s a slightly different approach to diet planning. You can make your recipes varied. You need a lot of protein, more fat than in other cases. Carbohydrates are also complex.

The main features of the diet are:

  • We use more protein than our physiological norm;
  • Fats and complex carbohydrates are consumed within the limits of our norm, carbohydrates are obtained from cereals;
  • They use less jam than usual, cakes, pastries, honey, sugar and salt.

During remission, it is advisable to omit substances that irritate the mucous membranes of the gastrointestinal tract. It’s not just alcohol - skip the vinegar and spices.

If remission occurs, the diet can be changed. Now you can no longer just cook or steam food. Roast and fry vegetables, fish and meat. Avoid rubbing: it is still allowed to eat the whole food. The food should be warm, but not hotter than 60 degrees. We eat 4-6 times per knock, taking a break of up to three hours between meals.

In numbers, it looks like this:

  • The protein requirement is 120 g, of which 70 g is of plant origin;
  • The fat on the medical menu is 90 g, one-third of which is vegetable;
  • We eat 350 g of carbohydrates a day, of which 40 g is easily digestible;
  • Calorie content - up to 2600 kcal.

Don’t be afraid of gentle food and tasteless vegetables. With pancreatitis, it is also possible to roam culinary knowledge. Here are some inspirations and sweets for a sample diet menu for pancreatic pancreatitis.

  1. Cottage cheese casserole in the microwave. Mix the 2% cottage cheese with the banana in a blender, add the chopped dates. Bake in silicone molds for about five minutes. Use with natural yogurt (unsweetened);
  2. Baked apples with cottage cheese meringue. The fruit is washed, freed from the middle, cut into two parts. Beat the protein and icing sugar separately. Add 2% cottage cheese to the mixture while whipping. The fruits are filled, baked in a normal oven (160 degrees) for one third;
  3. Biscuit. Mix the flour (6 tablespoons) with half a tablespoon of olive oil, the same amount of baking powder, warm water and a third of a teaspoon of salt, and Italian herbs to taste. Wrap in a 3 mm thick layer, pierce with a fork and bake at 170 degrees for a quarter of an hour.
